A Grown Up Take on Lunch: So Young Lunchboxes + Easy Lunch Recipe

I start grad school in a month! Since I will be living off-campus and will have long days, I have to pack my own lunch. It’s so weird not being on a meal plan.

Since I love eating fresh, and I love eating a lot, I knew I needed a lunchbox that was large and insulated, but you know me, the plain, black bag at Target was not going to cut it! Get this girl some style.

That’s why I was thrilled to stumble upon So Young Lunchboxes. Made from linen and paper, these bags are spacious and sturdy (perfect to bring lots of food every day to school), and also styled with gorgeous prints.

I went for a classic tan base with gorgeous, square black check dots all over it. This was simple, yet still whimsical, the exact look I was going for.

I was pleasantly surprised, besides the style, size, and quality, by the interior design. The box is lined, but also has a removable, insulated liner that can pop in and out of the box. This is washable, and great to keep the overall box clean and protected from spills!

There was also a sturdy strap included, so now I can carry my backpack, tea mug, and lunch with an extra hand!

I wanted to include a quick and easy lunch recipe that I have been enjoying, and it will be a staple as I pack my lunches. I love this egg salad, because I can eat it straight, with crackers, or in a sandwich, and it’s also super healthy! I do this to taste and make it fresh daily, so I don’t have measurements! Welcome to college cooking!

You’ll need…

  • Hard boiled eggs, chopped up (I usually chop up 2-3)
  • Cottage cheese
  • Pickle relish
  • Avocado (chopped up) (I use a half per salad…I like it heavy on the avocado)
  • Mustard
  • Salt
  • Pepper

Mix it all together! Seriously! I usually start with the cottage cheese and eggs to get it moist enough, then mix in the avocado and mustard, still keeping an eye on the consistency. Taste it to see if it needs more mustard. Then add salt, pepper, and pickles to taste!
