Ever hear of a clafoutis? It’s a traditional french dessert made with cherries, covered in a thicker, flan-style custard batter and baked. It’s eggy, dense, yet light, and is a bit doughier than a flan. It’s such a simple dessert, but is so versatile because different fruits and add ins really make the dessert.
I made a French style clafoutis with the traditional cherries, but used cottage cheese for added protein and texture. It was a unique and healthy recipe, and you wouldn’t know it was healthy! This is a great, diet friendly dessert that’s sweet and fresh.
Ingredients:
- A buttered baking dish
- 2 cups of frozen, pitted black cherries (still frozen is fine)
- 3 eggs
- 1 cup whole milk
- ½ cup small curd cottage cheese
- ⅓ cup sugar
- ⅓ flour
- 1 tsp vanilla extract
Steps:
- Place the cherries along the bottom of the buttered baking dish.
- Preheat oven to 375 degrees farenheit.
- Whisk together all the other ingredients (it’s that simple!)
- Pour mixture of cherries then bake for 40-45 minutes until golden brown.
