Baking Through the Alphabet: Cherry Clafoutis

Welcome back to my new series…Baking Through the Alphabet (a compliment to Cooking Through the Alphabet)! I’ll bring you a recipe for each letter of the alphabet, either with ingredients or some kind of descriptor. Enjoy!

Ever hear of a clafoutis? It’s a traditional french dessert made with cherries, covered in a thicker, flan-style custard batter and baked. It’s eggy, dense, yet light, and is a bit doughier than a flan. It’s such a simple dessert, but is so versatile because different fruits and add ins really make the dessert.

I made a French style clafoutis with the traditional cherries, but used cottage cheese for added protein and texture. It was a unique and healthy recipe, and you wouldn’t know it was healthy! This is a great, diet friendly dessert that’s sweet and fresh.

Ingredients:

  • A buttered baking dish
  • 2 cups of frozen, pitted black cherries (still frozen is fine)
  • 3 eggs
  • 1 cup whole milk
  • ½ cup small curd cottage cheese
  • ⅓ cup sugar
  • ⅓ flour
  • 1 tsp vanilla extract

Steps:

  1. Place the cherries along the bottom of the buttered baking dish.
  2. Preheat oven to 375 degrees farenheit.
  3. Whisk together all the other ingredients (it’s that simple!)
  4. Pour mixture of cherries then bake for 40-45 minutes until golden brown.
