Eco Friendly Hack: Have You Heard of Aquafaba?

I’m trying to live a more sustainable, eco-friendly lifestyle. Here’s some hacks and tips I’ve pick up along the way to reduce your footprint!

Food sustainability is critical: right now, and moving forward. I am so much more mindful about waste ever since Covid-19 started, especially because groceries are harder to find, and food insecurity is at an all time high. One way to do this is to repurpose food items you may not think to save.

Ever hear of Aquafaba? You may know it as a different name…bean juice!

Often just considered chickpea liquid, and canned bean has aquafaba, or the liquid beans are canned in. Rather than draining this down the sink, save it and use it as an egg substitute!

This is a great vegan replacement for eggs, and it repurposes an already affordable item: canned beans. Just whip it on high for 10-20 minutes until you’ve formed stiff peaks, and it can be used as an egg replacement! So far, I’ve used it to make mayonnaise and brownies. I’m thinking the options are endless.

So, have you made any changes to reduce waste? What are some of the uncommon ingredients you’ve repurposed into yummy recipes?

All thoughts and opinions are my own.
